酸奶是以鮮奶為原料,接種乳酸桿菌在溫度適宜及無(wú)氧條件下發(fā)酵而成的。酸奶經(jīng)過(guò)發(fā)酵后,原有的乳糖部分轉(zhuǎn)變成乳酸,但仍保留有部分的乳糖,所以形成特有的酸甜風(fēng)味。
Yoghurt is made of fresh milk, inoculated with Lactobacillus, and fermented under suitable temperature and anaerobic conditions. After fermentation, the original lactose part is converted into lactic acid, but some lactose is still retained, so the unique sweet and sour flavor is formed.
酸奶的種類:凝固型、攪拌型和添加各種果汁果醬等輔料的果味型酸奶。
